Our Absolute Favourite: Dairy and Wheat free Brownies!

In our home these brownies are the number one go to dessert. They are dark, rich and the absolute best chocolatey goodness you have ever tasted.
We eat them for lunch, snack, dessert and sometimes breakfast. : )
After our tummies couldn't tolerate wheat or dairy, our mama lovingly measured, sifted and made these brownies so that we could eat them.  These babies are so good your wheat and dairy eating friends won't even notice the difference. We promise. They are the perfect recipe to convince a wheat-dairy eating lover that not all our baking is dry, tasteless and crumbly grossness.

This recipe is originally from Nuts About Chocolate, a cookbook by the Lazy Gourmet Restaurant.
Our parents bought this little treasure trove of chocolate recipes over thirty years ago and it is now a relic in our kitchen. This cookbook is no longer in its book stage, and now lives permanently  in a sealed ziploc, as all its pages are full of smeared chocolate, cocoa, and are in various pieces. But we love it. And really isn't that proof of being loved? We think so :)





























From the Vault: The Timinski's Favourite Chocolate Spelt Brownies

adapted from the Nuts About Chocolate 

Ingredients

1 cup of vegan melted margarine, or coconut oil if desired
1/2 cup of white sugar
1 cup of brown sugar
3/4 cup of dark cocoa (yes it's more pricey then Fry's but makes the BEST chocolate brownie)
3 large eggs
1 1/3 cup of spelt flour
1 1/2 tsp of baking powder
1 1/2 tsp of vanilla

Preheat oven to 350'F, grease or line a 13' x 9' inch pan

Step 1: Sift together flour and baking powder. Leave it aside.
Step 2: In a large bowl mix margarine and both sugars until combined. Sift cocoa into mixture
Step 3: Add each egg (one at a time) and beat well, approx 1 min for each. Add vanilla
Step 4: Stir in flour mixture and combine. Pour mixture into prepared pan and bake for 30min, until center is firm.

You can add 1 cup of chopped walnuts if you fancy them. We love our brownies without, but feel free to toss them in with the flour. 

If you want the ultimate brownie experience try our favourite icing:

Carole's Chocolate Icing

1/4 cup of vegan margarine
1/2 cup of sifted cocoa
3 cups of icing sugar
3-4 tbsp of soya milk

Step 1: Mix the margarine and cocoa together.
Step 2: Slowly add 1/2 cup of icing sugar. Mix together. Add a tbsp of soya milk and blend.
Step 3: Keep alternating the icing sugar and soya milk until you get the right thickness.
